Easy Egg and Spinach Breakfast wrap

Here is a quick, easy and healthy breakfast. It’s high in protein and low in carbs.  

2 large eggs

5-8 spinach leaves, rinsed and cut in half

1/2 avocado

Goat cheese crumbles (optional)

1 whole grain wrap 

Salt and pepper to taste

In a pan, spray with cooking spray and add eggs.  Scramble eggs while in pan and add the spinach mixing well and allowing the spinach to cook. Season with Sal and pepper. Once eggs are cooked, set pan aside. On a griddle, warm the wrap about 1- 1 1/2 minutes on each side. Take the wrap and spread the avocado onto the wrap. Top with the eggs and spinach and sprinkle with the cheese. Fold edges over and enjoy. 

You can get creative by adding some ground turkey or sausage to the eggs and substituting the goat cheese for some grated mozzarella. Make this your own!
